What is the most common practice for changing gearing for different tracks? Change out the counter shaft sprocket only, rear sprocket only, or both?

Both, but remember changes to the engine sprocket will cause larger gearing changes. Also, make lots of notes, you'll use them next year

A basic rule is going down 1 tooth on the countershaft(engine) is like going up 3 on the rear sprocket - there are other variables but, its a good rule of thumb. If you really what to do it right you need to know your transmission ratios and do the math. Look around to find that out, if you don't have any luck P.M. me for info.
